How To Make Gingerbread Men Cookies

These crispy gingerbread men cookies are iconic in looks and taste and provide a blank canvas, ready for all sorts of festive artwork.

Making them from scratch helps to ensure they have all the bold flavors you love. Refer to the recipe for all the specifics, but generally, here’s how you make gingerbread men.

Make the Dough

In a large mixing bowl, combine the wet ingredients, then add in the dry ingredients and mix until a soft dough forms.

Chill the Dough

Once the dough is made, you’ll want to chill it in the refrigerator for 1 hour . Rolling out and cutting the dough is much easier when it’s cold.

Roll Out, Cut and Bake

Roll the chilled dough out to 1/8” thick (2 stacked quarters) and cut out with cookie cutters. Place each of your newly formed men onto an ungreased baking sheet. Decorate with candy or currants, as desired, and bake. Using an ungreased baking sheet prevents the cookies from spreading out too much in the baking process.

Pipe on the Frosting

Decorate the completely cooled cookies with frosting, as desired.

  • 1 1/2 cups granulated sugar
  • 1 cup butter, softened

    In large bowl, beat granulated sugar, butter and molasses with electric mixer on medium speed, or mix with spoon, until well mixed. Beat in water and egg until blended.

    Heat oven to 350°F. Roll 1/3 of dough at a time on floured surface to 1/8-inch thickness. (Keep remaining dough refrigerated until ready to roll.) Cut with floured 2 1/2-inch gingerbread boy or girl cookie cutters. On ungreased cookie sheets, place cutouts 1 inch apart.

To freeze cookie dough cutouts, place them in a single layer on a waxed paper-lined cookie sheet. Cover and freeze for 20 to 30 minutes or until firm. Then quickly transfer to an airtight container and line each layer of raw cookies with waxed paper. To thaw cookie dough cutouts, immediately transfer frozen shapes to baking sheet. Let stand 15 minutes to thaw. Then, bake as the recipe directs. Frozen cookie cutouts will keep for 3 months in the freezer.

Baked cookies can also be frozen in airtight containers, in between layers of wax or parchment paper and kept in the freezer for up to 2 months. Let thaw at room temperature. Frosted cookies don’t freeze as well. The condensation that occurs during the thawing process can result in frosting that runs or bleeds onto the cookies.
